Lamb baked inside baking paper


Lamb made into Turkish delight, delicious, with honeyed potatoes and kefalotiri. Easy recipe, with the flavors of the lamb and the aromas of the herbs to fill the palate and our memory... Since it's an old recipe... of our grandmothers... The preparation is quick, simple, and most importantly... relaxing!!!!


  • 1 leg of lamb around 2 kg
  • 4-5 cloves of garlic cut in half lengthwise
  • 1 kilo of baby potatoes or plain potatoes cut into large pieces
  • 60 gr of olive oil
  • Juice and zest of 1 juicy lemon
  • 1 k oregano
  • 1 tbsp thyme
  • 1 cup rosemary
  • 300 g kefalotiri cut into large pieces
  • Salt Pepper
  • 3 large pieces of parchment paper


  1. We ask our butcher to cut it into 2-3 pieces.
  2. Rinse it well with water, to remove any small bones from the cut.
  3. Then we dry it very well to completely remove the liquids.
  4. Place the 2 pieces of greaseproof paper crosswise on a tray and place the potatoes and season them with salt and pepper. Mix the potatoes and layer them nicely.
  5. Then we lean on the thigh. Put the garlic everywhere. If necessary, we also open holes with our knives.
  6. In a bowl, mix the olive oil, lemon and herbs. We pour it over our thigh and smear it to go everywhere. Season well with salt and pepper, and at the end put the kefalotiri in different parts. Carefully close the parchment paper and make sure to wrap and shield the meat with the potatoes as best as we can so that the juices don't spill out while they are cooking. Wrap the packet we have with another sheet of greaseproof paper for more reinforcement.
  7. Place the sheet with our package in an oven preheated to 200The degrees for about an hour and then to 180The degrees for another hour and a half to two hours. (depends on the oven)
  8. Once cooked, let it rest for about half an hour in its package, and then serve it on a plate...
