Artichokes with peas


Delicious, oily food that should not be missing from any home, especially when it is the artichoke season. Very nutritious hygiene with antioxidant properties, rich in β-carotene, vitamin K, lutein and other flavonoids. It protects us from many forms of cancer. It helps lower cholesterol, protects our body from various gastrointestinal problems and helps digestion, and maintains bone health.

The artichoke is cleaned as follows:

Put in a bowl water with plenty of lemon (1-2 lemons set)

Cut the stalk 3 fingers from the base.

On a cutting board, cut the top of the artichoke until it reaches the tender leaves.

Remove the outer leaves until they reach the tender ones.

With a sharp knife, cut the base of our artichoke around the perimeter.

Remove the fluff from the inside

With a lemon cup, grate the whole artichoke well, and dip it in the water with the lemon.

After we finish cleaning… we go to cook them


  • 12 peeled artichokes or one pack frozen
  • 300 g peas
  • 2 potatoes cut into thick slices
  • 2 carrots chopped sticks
  • 2 tablespoons chopped garlic
  • 1 chopped onion
  • 2-3 fresh onions, finely chopped
  • Or matte dill
  • Or matte fennel
  • Juice of 2 juicy organic lemons
  • 1-2 kg corn flour
  • Vegetable broth
  • Olive oil
  • Salt Pepper


  1. Pour a little olive oil in a casserole dish. Once warm, add our onions and sauté. Then add the garlic, peas, carrots, potatoes and artichokes. Saute lightly for 4-5 minutes, then add the broth and salt and pepper. Lower the heat and simmer for half an hour.
  2. Then take some of the zoumaki of the food in a bowl, add the lemon juice and the corn flour. Stir to dissolve completely and add it to the food, letting it boil for 2-3 minutes and let the sauce set.
  3. Otherwise you can tie your food to eggnog

-when we buy artichokes, their stalk is stiff. This means that they are freshly cut

-if you or artichokes have a flexible trunk, it means that they have been cut for days and so they will have a lot of fiber inside…

-Also are also excellent citizen or omelette (or sponge) or artichokes with yogurt.
