Lamb with traditional noodle

  • 1200 gr lamb leg in portions
  • 2 large chopped onions
  • 4 tablespoons chopped garlic
  • 2 coarsely chopped carrots
  • 2 kg coarsely chopped celery
  • 1 glass of white wine
  • 1 teaspoon crushed tomatoes or 1 tbsp grated tomatoes
  • 1 tbsp tomato paste
  • 500 gr barley
  • Salt-pepper-1 cinnamon stick
  • 4-5 grains of allspice- γ κ γ clove
  • Kefalotyri or grated mizithra


  1. In a saucepan, sauté our meat all around. 
  2. Then add the onion, garlic, pulp, quench with wine, add 1 - 1 ½ liter of hot water, carrots, celery, add the cinnamon, allspice, cloves, cover the pot and let it simmer until our meat is soft enough. . 
  3. Then put the sauce and the barley in the pan. Add the meat, strain the sauce, and keep the broth and pour it into the pan. 
  4. If you need other liquids, add a little warm water, so that it is about two fingers above the barley. 
  5. Bake in a preheated oven at 180The for about 45΄-50΄ minutes.
