Eggs eyes in tomato sauce


Eggs eyes cooked in tomato sauce, for many dives with bread !!!! Loved Greek traditional mom's dish, reminiscent of our childhood. Ideal country dish, fast, easy, very tasty, and combined with grated slices on top and pure virgin oil. What more delicious to choose today to make this dish ??? Necessary accompanying pre-baked fresh bread !!!


  • 1 chopped green pepper
  • 1 chopped red pepper
  • 4 chopped green onions
  • 4 ripe tomatoes passed in the grater
  • 3-4 eggs
  • 1 chopped onion
  • 1 clove of garlic melted
  • 50 g grated feta
  • 1 tbsp tomato paste
  • 4-5 chopped basil leaves
  • Olive oil
  • Salt-pepper-oregano-paprika-pinch of sugar


Saute the onion with the peppers in a deep pan. Then add the garlic and spring onion. Stir in quick movements and add the tomato, salt and pepper, paprika, oregano and basil. Lower the heat and simmer until the liquids are saved. Then break the eggs, and throw them very low in the sauce so that the yolks do not break. Cover with a lid and let the eggs simmer in the sauce.

Once the yolks are cooked, it is ready. Serve with freshly chopped pepper, and with grated slice on top. Along with the dish, necessarily a loaf of pre-baked freshly baked fragrant bread !!!! The ultimate dish !!!

  • If we want we can add a little hot pepper to make it more spicy.
  • We can serve it on slices with bread or even with pies.
  • If we have a large amount of eggs and sauce, make the sauce in the pan and then place it in pyrex or pan, put the eggs and the slice on top and finish in the oven.
