Great salad that all we need to know here is how to clean them.
Sea urchins are not all eaten in principle. Those eaten are reddish brown or brown or purple.
They usually always have a pebble or seaweed in their thorns.
The best sea urchins are the ones that gather at the full moon because then they have the most eggs.
- 15-20 sea urchins
- 2 tablespoons lemon juice
- 4 tablespoons olive oil
- Wear thick gloves and get a pair of scissors. We open them circularly from their soft side. Rinse with sand, preferably the sand from the inside and with a teaspoon remove the eggs, which have an intense deep orange color.
- Place them in a bowl and add lemon and olive oil and some of the sea water that the sea urchin has.
- You know the rest… ouzo, pareoula etc !!!
