Light strawberry cake

My dad's garden is full of strawberries. In addition to the dessert strawberry and strawberry jam, and because of the day we celebrate today, I will make an easy, quick, and light strawberry cake. I will fill it with strawberries inside and out since we have plenty, and I will make it not too sweet, but as much as… to have the wonderful result, and without regrets !!!!

Ingredients

For the sponge cake

  • 175 g of crystallized sugar
  • 175 g flour that swells on its own
  • 175 g butter at room temperature
  • 175 g egg
  • 1 vanilla
  • 1 pinch of salt

For the cream

  • 500 g sour cream
  • 250 g cream cheese
  • 100 g powdered sugar
  • 4-5 strawberries.

for garnish and filling

  • strawberries, (about 2 packs) and chocolate
  • a little light syrup and strawberry liqueur (optional)

Directions

We start with the sponge cake.

Beat the butter with the sugar with the mixer. Then add the egg, vanilla, salt and finally the sifted flour. We do not beat it much, so that the air does not leave us from inside the mixture. Grease the form with butter all around, powder with flour and pour the mixture. Bake in a preheated oven at 170The for about 40 '.

While you cook the sponge cake, wash the strawberries, separate some for garnish whole and some for the filling. The ones that are for filling are cut in half.

In a blender, take 4-5 strawberries and a little cream and grind them until they become puree.

Then beat the cream until firm and then gently add the cream cheese and icing, and the contents of the blender. Stir until the ingredients are homogeneous. Then put the cream in the refrigerator to tighten.

We make a light syrup to sprinkle our sponge cake, or if we have made strawberry liqueur we dilute the liqueur with the light syrup.

When our sponge cake is cooked, unmold it, and leave it to cool on the grill. Then cut it into 3 slices of sponge cake.

We start the assembly. Put the first slice of sponge cake on a plate, sprinkle it with the strawberry syrup, put a rich cream filling, spread it with the strawberries that we have cut in half. We repeat the process once again. At the end, place whole strawberries with cream, and melt chocolate and pour plenty on top. I kept an extra piece and rubbed it on the grater for an extra feeling of chocolate !!!!! Sprinkle the strawberries with icing.

-the mold I used for the sponge cake was 22 cm in diameter. If you have a bigger form, cut the sponge cake into two slices.

-If you want to make it for a table, you can simply prepare the sponge cake, the strawberries and the cream, and when you need it, assemble it within 5 minutes so that it is fresh!

-select ripe strawberries for mashing in the blender to give color and flavor to the cream.

-instead of plain syrup or strawberry liqueur, you can dilute it with a little strawberry jam.
