Beans oiled with lemon

Our favorite cool tender and delicious beans in its lightest and summer version! An alternative if we are tired of the sauce.

Our materials

  • 1 kg of beans freshly cleaned or frozen
  • 2 potatoes cut into chunks
  • 2 sliced carrots
  • 2 zucchini cut into thick slices
  • 1 chopped onion
  • 3-4 fresh onions, finely chopped
  • 1. Cup of water or vegetable broth
  • 2 tablespoons garlic
  • 2 lemons
  • Or a bunch of parsley
  • ½ bunch of dill (optional)
  • Salt Pepper
  • Olive oil

Directions

  1. After we have cleaned and washed our beans, we take a casserole dish and sauté the onion. After it turns blonde, add the garlic and potatoes, with the carrots, zucchini and green beans.
  2. Stir and after sautéing for 2 minutes add water or vegetable broth and cover the pot. Let them simmer for about 40 minutes. We make sure our fluids do not run out, however.
  3. Once 40 minutes have passed, add the parsley or dill to our lemon (be careful and try not to get too sour in the taste, it depends on how juicy the lemons are) and a little more olive oil.
  4. Let it simmer for another 5 minutes and then remove from the heat.
