I have leftovers from the vegetable pie I made. I will make a wonderful dish that I have met in Ioannina and it is one of my favorites. Extremely tasty, healthy and can be consumed during periods of fasting.
My materials are as follows
- 300 gr giants
- 1 kg of various greens (spinach, lapata, celery, myronia, kaukalithres)
- 1 sliced onion
- Or a bunch of freshly chopped onion
- 1 sliced leek
- Or a bunch of chopped dill
- 1 Florina red pepper (optional) cut into thin strips
- 2 sliced garlic cloves
- Salt, pepper, olive oil
Implementation
- We have put the giants in the water overnight (they want at least 15 hours)
- The next day we boil the giants. We throw the water first.
- In the second water, simmer until soft.
- Saute the onion and leek in a saucepan. Once sautéed, add the garlic and Florin pepper.
- Fill the giants with their water and let them simmer for 10 minutes.
- Place our greens in a pan and rub them with a little salt. Spread the giants on top with a slotted spoon and then pour their liquids. (If necessary, add a little liquid). Place the pan in the oven for half an hour at 180 degrees
- We can also add tomatoes to our recipe, if we want. It will become a little "heavier". I think that in order to highlight the delicate flavors of our greens and herbs, the dish will be lighter and more fragrant without tomatoes.
- Serve with olives and feta (If we are not fasting) and of course fresh bread.
