Healthy vegan salad

A healthy salad full of strength and energy that can replace a meal because of the quinoa legumes and the rich vegetables it contains.

Ingredients

  • 1 cup boiled quinoa
  • 1 eggplant cut into slices, cooked and cut into frames
  • 1 avocado cut into frames
  • 100g red beans boiled
  • 2 chopped green onions
  • 1 small onion, finely chopped
  • 1 clove chopped garlic
  • Or chopped coriander
  • Or chopped red pepper
  • Or olive oil
  • Juice from a juicy lemon
  • Salt, pepper, oregano
  • ¼ κ γ κύμινο

Directions

Mix the ingredients with the spices. Leave it in the fridge for 1 hour to homogenize the flavors and aromas.
