Soy kebab with vegetables and quinoa


A recipe for vegetarians, for vegans, for Lent fasting, for those who want something healthy but not to lose any of the nutrients.


  • 250 g soy kebab
  • 2 chopped onions
  • 2 tablespoons garlic
  • Or coke pepper
  • Or pepper
  • 4-5 agaric mushrooms
  • 2 grated ripe tomatoes
  • 2 κ σ πελτές
  • 4-5 spices
  • 1 cinnamon stick
  • 1 pinch of nutmeg
  • ½ wine glass coc. wine
  • Salt Pepper
  • Olive oil


In a saucepan pour a little olive oil and sauté the onion, then the garlic with the pulp, add the mushrooms and peppers and quench with wine. Add the tomatoes and soy kebab spices and stir. If necessary, add a little water. Let it simmer for about 20 minutes to half an hour.

While our sauce is simmering, we can make our quinoa at the same time.


Quinoa is a shrub that produces these small seeds.   • 1 cup quinoa
  • 2 cups vegetable broth or water
  • Salt

I take the quinoa and put it in a colander. I rinse with plenty of water to remove the saponins which are in the seed coat and give off a bitter taste. In a saucepan with broth or boiling water, add the quinoa and stir. We do not leave close because it wants supervision and mixing often. As soon as we see that he has drunk the liquids (at about 20 minutes) we take him out of the fire.
