Kolyvas comes from the ancient Greek word kolyvos which was a grain of cereal. It is a kind of sweet that we dedicate to the memory of a deceased person and offer it to our loved ones. On the Friday of the huts we always have our candle lit and we burn incense.

We find them in variations depending on the place, and each ingredient has its own symbolism.

The wheat symbolizes the soil, but also the meaning that just as the seed that will be buried after it has rotted and worn out, then grows new stronger and more beautiful, so we who await the Divine Resurrection, the almonds the pebbles, the parsley the grass, the pomegranate, the joys that the deceased had, the raisins, the sorrows that he went through in his life… and all this composes man. As for the decoration above, we symbolize the memory, and that is why we put the initials of the deceased that we have made.

We make the huts: on Psychosabbath, the third day of man's sleep, where we scatter the huts in his memory and break the plate, at 9 days, with the appropriate, at 6 months, in time, and in each year that closes the deceased or whenever we want to perform a memorial prayer for the rest of our sleeping people

Ingredients

  • 500 g of wheat
  • 250 g peeled almonds
  • 500 g powdered sugar
  • 200 g coffee raisins
  • 50 g sesame
  • 1 pomegranate peeled
  • 2 tablespoons chopped mint
  • 2 kg cinnamon
  • 5-6 tbsp roasted flour.

  • We put the wheat in the water overnight, and the next day you boil it.

After rinsing it well, spread the wheat on a lint-free towel or tablecloth.

Roast the sesame and flour in a clean-dry non-stick pan.

When the wheat is dry, put it in a large bowl with all the ingredients except the flour and sugar. Mix all ingredients together.

Then we take a plate or a beautiful utensil that we will place our huts, and we put the filling that we made. Then spread on with a paper towel or a thin clean cloth and shape by pressing.

Then spread the toasted flour, and repeat the process with the cloth. Then we pour the icing on top, press with the cloth one last time and then decorate with sweets, almonds, pomegranate, cinnamon powder, as we think our huts will be beautiful
