Delicious chicken salad nutritious and fast. Easy solution for your daily table, but also at a table with friends or at a party.
It can become a complete meal for you at work, because it is filling, light and healthy.
- 3 boiled eggs
- 2 roasted or boiled chicken breasts
- 1 lettuce cut
- 1 lolo rosso cut
- 1 grated carrot
- 1 cup boiled corn
- 2 chopped spring onions
- 1 cup mayonnaise light (optional)
- 2 tablespoons yogurt
- Olive oil
- Salt Pepper
- Grate and juice of a lemon
- In a bowl, mix the lettuce with the lola, the carrot, the egg and the chicken.
- In a bowl, beat the yogurt with the zest and the lemon juice and add a little olive oil and salt with the freshly chopped pepper. (Optionally add the mayonnaise)
- Pour over our salad, stir and serve.
