Couscous with vegetables


A wonderful delicious and colorful dish that is loved by young and old. The vegetables leave their flavor and the couscous pulls all the flavor and the result is simply wonderful.

We can serve it as a main, but also as a side dish to fish, beef, chicken, etc.


  • ½ κ κους κους λαχανικών
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 zucchini cut into thick slices
  • 1 red pepper cut into slices
  • 1 green pepper cut into slices
  • Or cauliflower in bouquets
  • Or broccoli in bouquets
  • 3-4 sliced agaric mushrooms
  • 1 cup vegetable mix
  • 1 liter of chicken or vegetable broth
  • Salt Pepper
  • Olive oil
  • Grated cheese optional


  1. Saute the onion and vegetables with our garlic in a saucepan. 
  2. Then add the couscous, stir and add our broth. Season with salt and pepper, close the lid and lower the heat to simmer for 20-30 minutes.
  3. Remove from the heat and let it rest for 10 minutes.

Serve hot with grated cheese.
