Shiny bread or Lambrokouloura

Bright Bread is the festive bread that we put on the table and will accompany our meal on the Resurrection. It is basically a cross-shaped bread that is only flavored with spices, and decorated with a red egg. Tradition has it that we make it on Holy Saturday, with leaven, which was prepared on Holy Thursday or with a cross flower, or with holy water. It is soft and fluffy and is between bread and bun. Others put mahlepi and kakoule, (Kosona where the godfathers went to the baptisteries), others put mastic and anise for a milder and lighter taste so that it stands out from the bun and can accompany the meal. In Thrace we will see it with 4 red eggs at the edges and one white in the middle.

Ingredients

  • 150 g flour possible
  • 350 g soft flour (goh)
  • ½ κ γ αλατι
  • 70 g of honey
  • 2 tablespoons olive oil
  • 300 g of lukewarm water
  • 2 lenses dry yeast
  • 2 tablespoons anise
  • Or crushed mastic
  • 4 pcs asteroid anise
  • 1 cinnamon stick

For decoration

  • Mavrokouki
  • Sesame seeds
  • Almond fillet
  • 1 red egg

Directions

  1. We start with water. Put in a saucepan around 350 g of water. Put in the asteroid anise and cinnamon and let it boil for 2-3 minutes. Then strain the water and keep 300 g of water, and the little rest that is left we keep for the end. Add the honey to 300 g of water and stir until it melts. We expect it to become lukewarm.
  2. While we wait, sift the flour in a bowl. Add salt, anise and mastic. Once the water has warmed up, make a hole in the flour, and add the water and the yeast. Form a pliable dough. Put the dough in a floured bowl (so that it does not stick to us) and with a film closed in a warm place and wait for it to double in volume. (you can stuff it at 40The -45The grades)  
  3. Once it has doubled, we take our dough, and shape it into the design we want, creating a cross, and place the red egg in the middle. Take the water we have kept, and add a little honey, inside and stir to dissolve. Brush the entire surface of our dough and garnish with almond fillet, sesame seeds and black currant. Put the dough again in a warm place to rise again. 
  4. Once it has risen enough, bake for 25 minutes at about 180The degrees in resistors.
