Mushroom liqueur


Loved mushrooms… and what mushrooms ??? Beetles !!! Wonderful beetles from Nectarios, which we will make into liqueur and I will combine it with honey, which will give wonderful notes of flavors to our liqueur.


  • 300 g beetles mushrooms or 70 g dried
  • 100 g of thyme honey
  • 100 g sugar
  • 450 g of tsipouro or vodka
  • 300 g of water


  1. Rinse the beetles and let them dry.
  2. Put the beetles together with the tsipouro in a jar and leave it in a shady place around the month. Stir the jar at regular intervals
  3. Then dissolve the honey with the sugar in a saucepan, with the water on a very low heat (to be lukewarm). Wait for the water to cool with the honey and incorporate the tsipouro after we have strained it before the mushrooms.
  • If you want a sweeter liqueur, enhance it with more honey or a little sugar, when you integrate honey with water.
  • Personally, I kept the jar for more than a month because the mushroom has a delicate taste and I wanted it to be stronger.
  • Honey is an ingredient that because it is not accurate in its sweetness, you also fluctuate the amount we put in. Because other aromas and sweetness has e.g. the honey of the flowers, the other thyme, pine, chestnut, sunflower, acacia asparagus, orange reiki etc.
