How much more beautiful to pick cherries from the tree, the ripe but also the tight ones at the same time, and to make them sweet or even jam! A jam velvety, aromatic, and of course easy! What better way to make jam in the village, in the traditional way… Coffee with friends, with laughter, joy, teasing and at the same time plans for the future. I came to the village unprepared, my tools are missing… .that is why my friends are here, to get out of the difficult position !!!! The "tsoukali" comes in for the slow cooking, and we in turn for a chat….
- 1 kg of peeled cherries
- 1 kg of sugar
- 2 tablespoons lemon juice
After we cleaned our cherries together, always with gloves so as not to be painted, we put the cherries and the sugar in layers in the "tsoukali" (pot). Then we put the hoof on the fire and after it gets a boil we lower the heat and let it simmer for about 3 quarters. During the whole cooking we constantly skim the foams that collect on the surface. We prefer to mix with a wooden spoon. Just before our jam sets, add the lemon. Bring to a boil. While it is hot, put the hand blender and mash the jam. Personally I like to have pieces of cherry… so I mash the cherries by hand wearing a glove at the beginning I put the cherries in the hoop. After the jam boils and sets (we put a teaspoon on a coffee saucer and check that it holds, and it is sticky, then it is ready), we put our jam in jars which we have sterilized by the method of boiling.
Time to try what we have made… .plate, bread or toast with butter. Perfect!!!!!
