Sofrito beef


Corfiot classic specialty that has been loved by all of us. Beef in thin slices that melt in the mouth with garlic and parsley. Wonderful!!! A recipe for your table that I am sure will not be left untouched!


  • 1 k beef panties cut into thin slices
  • 1 bunch of parsley
  • 8-10 cloves garlic cut into thin slices
  • 100 g white vinegar
  • Hot water or beef broth
  • 100 g white wine
  • 1 cup butter
  • olive oil
  • Salt, freshly chopped pepper
  • A little flour for the flour


  1. We wash and dry our meat with absorbent paper. Season each side with salt and pepper and then flour. Shake to get rid of a lot of flour. Heat the oil in a pan. Fry the meat on both sides. Put the pieces in our pan little by little to keep the oil warm. Only then will they be fried properly. When the temperature drops by dropping a lot, they will boil in oil and tighten.
  2. In a small frying pan next to it, pour a little olive oil and garlic with our parsley and leave it for a minute.
  3. In a saucepan, spread butter on the bottom and start to put our fillets on top. Between the layers of our fillets we throw the parsley with the garlic. So that it goes everywhere.
  4. Once the butter has melted with the temperature, quench with the white vinegar. Allow the strong aroma of the vinegar to leave for a while and continue with the wine. Then add hot water or beef broth (until the fillets are well covered) lower the heat and let it simmer until the liquids are saved and a thick sauce is left.
  5. We can accompany it with french fries, baked potatoes, spaghetti, mashed potatoes or whatever you like.
  6. Serve the fillets together with the garnish drizzled with the wonderful sauce.
