Omelette with egg whites - spinach - feta

A very popular omelette, rich in iron very lightly low in fat and can keep you full until lunch

Ingredients

  • 3 egg whites
  • 1 cup spinach leaves
  • 5-6 cherry tomatoes cut in half
  • 80 g grated feta
  • 1 cup olive oil
  • Salt Pepper

Directions

  1. Pour the olive oil in a pan over medium heat.
  2. Then add the cherry tomatoes and sauté them lightly.
  3. Then add the leaves from the spinach, the egg whites with a little salt, after we have beaten them very well.
  4. Turn the omelette on the other side and add the grated feta. Cover the pan for a minute to melt the feta and serve immediately with freshly ground pepper.
