Traditional cook


Our traditional cook that all of Greece makes on the day of the Resurrection. Rich, full, with not a spoon left !!


  • 1 lamb liver, lungs and chicks (It would be good from a small animal to be more tender and not to smell bad)
  • 1 bunch of chopped spring onions
  • 2 lettuce coarsely chopped
  • 2 medium dry onions
  • Or glazed rice
  • 1 bunch of chopped dill
  • 2 tablespoons fresh butter
  • Or olive oil
  • Salt Pepper

For the eggnog

  • 2 juicy lemons
  • 2 eggs
  • Salt Pepper


  1. We prepare the little boys. Wash them very well with plenty of water and turn them (with the help of a ink pen without the ink or with a knitting needle or a small stick). Wash them again very well with plenty of water. It would be good to leave them in vinegar or lemon for a while. In order not to throw the little men at us when we will scald them right - left, we can tie them in a braid, it will be easier to scald but also to cut.
  2. Boil the boys, the liver and the lungs for 10 minutes.
  3. Drain, rinse and leave to cool.
  4. Finely chop the entrails into very small pieces.
  5. Saute the onions in a saucepan and add the chopped offal and stir for 10 minutes. Add hot water or broth and add the lettuce. Add salt and pepper and simmer for 30 minutes. Once this time has passed, add the rice and continue to cook for another 20 minutes or so. Just before the end of our cooking, add the dill, stir to bring to a boil, remove from the heat and add the eggnog.

Egg lemon would be right to do at the last minute on the night the cook is served.

For the eggnog

Beat the eggs very well with the lemon juice (we put the juice of a lemon in the beginning so that it does not come out too sour).

After we have removed the food from the heat and we have left it for about 5 minutes, we take the broth from the cook with the spoon and we throw it in the eggs with the lemon very, very slowly. Once it has reached the right temperature of the pot, add the eggnog to the cook slowly and stir in parallel. Bring to a boil for 2 minutes and stir. We test if he wants extra salt, pepper or lemon.
