Rich salad of the farmer


What can I say about this wonderful salad? Can I say how many nutrients it has? Tell me how delicious it is? It is very similar to the multigrain salad, basically with the legumes, only here you enrich it with vegetables and it makes it a complete meal in itself. I do not think I need to say much about this unique my favorite salad, which if you try it I am sure you will like it and it will become one of your favorites.


  • 100g boiled black beans
  • 100g moderately boiled beans
  • 100 g of boiled red beans
  • 2 boiled zucchini
  • 1 chopped red pepper
  • 1 chopped yellow pepper
  • 1 chopped onion
  • 2 chopped green onions
  • 1 cup olive fillet
  • 4 mushrooms cut into small pieces
  • 2 tablespoons chopped garlic
  • Oregano pepper salt
  • Lemon juice
  • Olive oil


  1. We have been putting our legumes in the water overnight. The next day we boil them and drain them
  2. Boil our zucchini at the same time.
  3.  Put all our legumes together with the vegetables in a bowl.
  4. In a frying pan, lightly sauté the mushrooms and the zucchini after we have cut it into small pieces. At the last minute, add the garlic, salt and freshly ground pepper, lemon juice, and oregano so that our vegetables just get the aroma.
  5. Pour over our salad and mix lightly.

-If we want we can add corn, or parsley or a boiled egg.

We can include smoked cheese or apaki or louza or village sausage, and transform it into an incredible meze for wine
