Materials

  • 6 aubergines in medium flasks
  • 2 tbsp fresh butter
  • 2 tablespoons flour
  • 1 glass of fresh lukewarm milk
  • Salt Pepper

Implementation

  1. We take the aubergines, we pierce them with a fork and we grill them. We put a pan with water underneath so that when the aubergines are dripping, our oven does not get dirty.
  2. While they are cooking, we put a saucepan on the fire and melt the butter. Then add the flour and mix with quick movements for 3 minutes.
  3. Remove the pan from the heat and add the milk little by little. We leave it aside. Take the baked aubergines out of the oven and put them in the blender.
  4. Incorporate the aubergines into the saucepan and stir, correcting the taste with salt and pepper.
