Cauliflower risotto with mushrooms

Have you ever tried making cauliflower risotto ??? Before you think negatively, you should know that you will love it, as it is healthy, fast, filling, low in carbohydrates, gluten free, and very tasty !!! Make it and you will go crazy !!! you will adopt it in many recipes, and create the most delicious dishes!

Ingredients

  • 1 cauliflower
  • 400 g mushrooms
  • 1k olive oil
  • 1 large onion
  • 1 cup vegetable broth
  • Salt Pepper
  • Serving parsley and grated cheese

Directions

  1. Peel a squash, grate it and chop the cauliflower. Wash it and with a grater in the big hole, rub the hazelnuts. You can also put it in a food processor if you want.
  2. In a saucepan pour the olive oil, sauté the onion, then the garlic, the mushrooms. Once the mushrooms are sautéed, add the cauliflower risotto, and sauté all our vegetables together lightly. Then add the vegetable broth, salt and pepper, and let it simmer for 2-3 minutes.
  3. Serve sprinkled with parsley and cheese of your choice!
