Risotto with smoked salmon


Easy and very fast bottom, with a velvety feeling, creamy, tasty, aromatic, light, and very tasty. All you have to do is try it !!!!!


  • 300 g rice for risotto
  • 900 g of vegetable broth
  • 250 g smoked salmon cut into slices
  • 3-4 spring onions, only the white part
  • A little olive oil
  • 2 tablespoons capers
  • 2 tablespoons chopped garlic
  • Or chopped dill
  • 1/3 cup vodka
  • 100 g grated parmesan
  • Salt Pepper


  1. We prepare the broth and we have it hot next to us, in the pot where we will make the risotto
  2. We start sautéing our onions together with the capers. Then add the garlic and rice and sauté for a few minutes. Quench with vodka, wait for the alcohol to drain and start pouring the broth little by little with a ladle, stirring the rice until all the liquids of the broth are gone at a time.
  3. Just before making our risotto, add the salmon, parmesan, and dill.

Serve creamy, with freshly chopped pepper.
