Shrimp risotto


A wonderful dish, light, healthy, fasting, since it has no animal ingredients inside. Very easy, with the simplicity of the few ingredients, which does not weigh down with many spices, and does not cover the delicate taste of the shrimp. You hide all the flavor in the base… the shrimp broth that we will use. So are you thinking of anything better ???


  • 500 g of shrimp cleaned
  • 900 g of shrimp broth
  • 300 g rice for risotto
  • 1 chopped onion
  • Or white wine
  • 2 tablespoons olive oil
  • 2 tablespoons chopped dill
  • 2 Kozani yolk fibers
  • Salt Pepper


We start by making it biscuits. We keep our broth warm near our pot where we will make the risotto.

Pour a little olive oil in a saucepan and start sautéing our shrimp. Saute them for half a minute on each side and then remove them and keep them covered in a clean pan. Continue to sauté our onion in the same pot. Then add the rice and sauté for 3-4 minutes. Quench with wine and then with a ladle pour a ladle of hot broth into the rice. Continue to stir, add the Kozani yolk, and as soon as the rice is dry, add another spoonful of broth. Continue the same process until the broth is finished (you may need a little less broth depending on the rice you choose). Correct our taste with salt and pepper and serve hot by sprinkling chopped dill.
