Rolls stuffed with peppers and sausage


Wonderful fragrant rolls very tasty with various peppers and sausage and with plenty of cheese overflowing in every bite.


  • 2 red peppers
  • 2 yellow peppers
  • 2 green peppers
  • 3 rustic sausages (around 700gr)
  • 250 g of cheese mix
  • 3 ripe tomatoes passed in the grater
  • 1 onion, finely chopped
  • 2 tablespoons chopped garlic
  • Or chopped parsley
  • Salt, pepper, oregano
  • Olive oil


  1. Wash the peppers thoroughly. Cut them vertically in the middle and then again vertically in the middle of each piece. Clean the stalks and the seeds and lightly oil them and season them with salt and pepper. Put them in the oven and bake them lightly. In the same pan, put the sausages to cook moderately.
  2. While we cook the peppers, we prepare the rest of our ingredients.
  3. Saute the onion in a saucepan. Then the garlic and then add the tomato. Season with salt and pepper and let it simmer on low heat until it loses a lot of its liquids. Just before it is done, add chopped oregano and parsley.
  4. However, remove the peppers and sausages from the oven
  5. We cut our sausages into small pieces, we take a pepper, we put grated cheese on it and then we place our sausage.
  6. Wrap the pepper together with the cheese and the sausage and fasten it with a toothpick.
  7. Repeat until all our ingredients are finished.
  8. In a pan, pour sauce on the bottom until it is covered. Place our peppers and then pour the rest of the sauce on top and finally the grated cheese.
  9. Bake for 30 minutes at 180The in the air until our cheese gets colored.
