Salad with cherry tomatoes and arugula

An impressive salad easy and fast that steals the impressions from the colors but also from the combination of flavors. Serve at a Sunday table but also at a festive one, such as Christmas or Easter.

Ingredients

  • 1 rocket cut
  • 1 cup of cherry tomatoes
  • 1 cucumber cut into cubes
  • Or fillet olives
  • 1 yellow pepper cut into cubes
  • 100 g diced mozzarella
  • 10 sun-dried tomato fillets
  • 2 tablespoons balsamic vinegar
  • Or olive oil
  • Salt Pepper

Directions

  1. In a blender, mix the sun-dried tomatoes with the olive oil, the balsamic and the salt and pepper.
  2. In a bowl add all the other ingredients and mix.
  3. Put the salad in a salad bowl and pour the sauce on top.
  • Wonderful salad for appetizer or side dish for spaghetti, meat etc.
  • You can prepare it and the last stage that we pour the sauce to do it at the last minute so that the vegetables do not wither
