Quinoa salad with grilled vegetables and basil sauce


Wonderful salad, fresh, healthy, nutritious, filling and very very tasty. Personally, it is one of my favorite salads that I often make even as an accompaniment to fish, meat or as a light meal. I just love her !!! Keep the recipe, because it will become one of your favorites


  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 large ribbed mushrooms
  • 1 zucchini cut lengthwise
  • 1 sliced eggplant
  • 1 cup quinoa

For the sauce

  • 1 ripe tomato without skin and seeds
  • Or dried onion
  • 10 basil leaves
  • 8 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 1 tsp small garlic (optional)
  • Salt Pepper


  1. Grill our vegetables on the grill or grill after we season them with salt and pepper and add a little oil. Then we cut our vegetables into small pieces (karedaki). First we will peel the peppers. While doing this process with the vegetables, boil the quinoa. The cooking process is like we do on rice.
  2. Put the ingredients for the sauce in a blender. Stir and taste.
  3. Drain and rinse the quinoa. Then throw it in a bowl with the chopped vegetables. Add the sauce and stir. Try for salt and pepper.
