Salad with avocado

Cool salad with avocado. Satisfying, and healthy for your diet, for the office or for a light meal in the evening.

Ingredients

For the salad

  • 1 avocado
  • 2 cups wild rocket
  • 1 cucumber cut into squares
  • 1 tomato cut into squares
  • 10 g grated feta

For the sauce

  • Or avocado
  • Olive oil
  • 8 tufts of coriander
  • 10 tufts of parsley
  • Salt-white pepper
  • Juice of 1 lemon
  • 1 tbsp sliced garlic

Directions

  1. We start with the sauce. Put the olive oil with the garlic in a kettle, and as soon as it heats up, remove it from the heat. Once it cools, strain it.
  2. Finely chop the coriander, parsley, and mash the avocado in a mortar or multi.
  3. Add the olive oil, coriander, parsley, lemon, salt and pepper to the mashed avocado.
  4. Stir and add more olive oil if needed.
  5. In a salad bowl, finely chop the tomato, cucumber, feta cheese and the remaining half of the avocado and place them on the arugula leaves.
  6. Pour over the sauce.
