Soupitsa wonderful very tasty, favorite dish of the Italians. There is no specific recipe as they made it with the vegetables or legumes they had at home and concentrated it with chopped pasta or other pasta they had.
Very nutritious, and housewives used to make it because they used whatever vegetable they had in whatever quantity it was.
It was accompanied by croutons or pieces of cheese.
Here we will see it in its most common form, and of course in its easiest version.
- 250 g of mixed vegetables
- 1 carrot
- 1 BC chopped pepper
- 1 cc. Chopped pepper
- 1 zucchini chopped
- 200 gr chopped macaroni
- 1 pack of tomato juice
- 1 onion, finely chopped
- 1 potato cut into small pieces
- 1 liter of vegetable broth
- Olive oil
- Salt Pepper
- A little chopped basil
Heat the oil in a saucepan and sauté the onion. Add the tomato juice, bring to a boil and then add the vegetables and the broth. Simmer for about a quarter and then add our pasta. Simmer until our pasta is ready.
