Spaghetti with pumpkin


Special, special, creamy, aromatic, different, and very tasty pasta. What can I say first about this spaghetti? So easy, economical, light with the spark of the spicy cheese inside makes it unique! What do you say; Are we trying it?


  • 800 g peeled pumpkin cut into cubes
  • 1 sliced leek
  • 2 tablespoons garlic
  • Or white wine
  • 3-4 tablespoons olive oil
  • 1 pack of spaghetti spaghetti (or whatever you like)
  • 300 gr vegetable broth
  • ¼ κ γ coriander
  • 2 kg butter
  • 1 kg fresh thyme
  • ½ κ γ nutmeg grated
  • 150 g spicy grated cheese
  • Olive oil
  • Salt Pepper


In a small saucepan, pour the olive oil, the leek, and after sautéing, continue with the garlic, add the pumpkin. Let them sauté for a while and then quench with the wine, let the alcohol go, add the broth to our spices, lower the heat and close the lid to simmer. While the sauce is simmering, boil the spaghetti and keep a glass of their water in the strainer.

When the pumpkin has boiled very well, we keep 2-3 pieces where we chop them finely, and we mash the rest. If the sauce is too tight with the water we kept, we can dilute it slightly. Add the butter, bring to a boil and then add the spicy cheese sauce and pumpkin pieces to the spaghetti, and mix gently.

Serve with fresh thyme and grated cheese.
