Traditional bread that you fortify with feta cheese in crumbs. In the old days, housewives kneaded bread once a week, and separated a quantity of dough in which they put grated cheese, which they made themselves from the animals. They offered it to their husbands when they left for the fields. They often put herbs in them such as thyme, oregano, etc. Nowadays you can find it in all bakeries in Greece since it is a favorite snack for all hours and we can enjoy it everywhere, at home, in the office at school and even in the car. .
- 350 g hard grated feta
- 600 g bread flour
- 410 g of lukewarm water
- 1 kg salt
- ½ κ γ sugar
- 1 sachet of yeast
- 2 kg oregano
- 2 kg of sesame
- 2 tablespoons melted butter for spreading
Put a small amount of lukewarm water in a bowl, along with the yeast and sugar. In another bowl, mix the flour with the salt and oregano. Once the yeast is activated, we incorporate it in the flour as well as the rest of the water. We make a dough which should be sticky. Leave it aside to rest until it doubles in volume. Then incorporate the feta. Knead our dough very well again so that the feta goes everywhere. Then we place it in our pan and open it with our palms a round pie. And finally, after we have melted the butter in a bowl, we dip our fingers and give shape to our dough. Make a round notch, two or three points deeper than where the dough ends. Make cross bites, up to the center. Then we make small pieces of the round cornice that we made in the beginning. Let it rest and inflate. Preheat your oven to 180The degrees in the air. Just before we put it in the oven, spread our bread with the rest of the butter and sprinkle with sesame seeds. When it gets a rose color, we take it out.
