White chocolate cake with mirror glaze


A cake for all occasions, where we can color it accordingly and give the style and character we want. Light blue for birthdays for boys, pink for girls, red for St. Valentine's Day, red-green Christmas, in colors depending on the theme, etc.

Based on pop cereal that becomes crispy and very popular with children

Base with pop cereals

  • 125 g of popcorn
  • 40 gr merenda
  • 10 g of seed oil
  • 125 g melted milk chocolate (you can also health)

Incorporate all our ingredients together with the help of a mariz with circular movements from bottom to top and immediately lay on the bottom of the cake (hoop) and place it in the refrigerator to tighten.

White chocolate mousse

  • 250 ml milk
  • 10 sheets of gelatin soaked in water
  • 440 gr chopped white chocolate
  • 500 g whipped cream

Bring the milk to a boil, remove from the heat, add the gelatin and mix well until melted.

Add the mixture to the bowl with the chopped chocolate and mix. When the temperature drops a little (around 38 degrees), incorporate the whipped cream with gentle movements (so that the volume does not fall). Add the mixture on the base and spread the surface nicely and as evenly as possible. Put it in the fridge and leave it for several hours to tighten well (ideally leave it overnight).

Mirror glaze

Group 1

  • 60 ml of water
  • 10 sheets of gelatin soaked in water

Group 2

  • 80 ml of water
  • 80 g glucose
  • 80 g sugar

Group 3

  • 150 g of sweetened condensed milk
  • 80 g chopped white chocolate
  • Color of our choice

Method of preparation

  1. Boil the water and incorporate the gelatin leaves and stir until dissolved. Put the gelatin mass in the refrigerator.
  2. At the same time boil the water, the glucose and the sugar (its ingredients 2)
  3. Once it boils, pull it out of the eye and add the jelly mass. Mix well
  4. Place all this in the bowl where we have the chopped chocolate with the sweetened milk and mix well with a fork.
  5. Divide our mixture into 3 equal parts. In one we leave the white chocolate and in the others we put the colors of our liking.

When we pour them in the cake, we will carefully put the mixtures all together from one end. WE DO NOT MIX THEM. We just integrate them all into one.

Cake composition

We take a pan and put a plate upside down.

Remove the iced cake from the fridge and place it on the plate.

We take the mirror glaze and start pouring evenly all over our cake. Leave it out until the icing is dry.

Once dry, place it in the refrigerator.
