Lenten bun

  1. To activate the yeast
  • 250 g of lukewarm water
  • 20 g of dry yeast
  • 80 g flour for bun (in yellow package)
  • 1 tablespoon sugar
  1. Ingredients for our bun
  • 1500 g flour for bun (in yellow package)
  • 400 g sugar
  • 500 g of orange juice
  • 250 g of seed oil
  • 4 gr mahlepi
  • 4 gr kakoule
  • A pinch of salt

Sugar water for spreading:

  • 2 cups powder 4 cups water.


  1. We start first with the yeast. In a bowl, mix the ingredients of the 1st stage. Leave the bowl covered in a warm place and while we wait we proceed to the 2nd stage.
  2. In a small saucepan, add the orange juice, sugar, seed oil, mahlep, kakoule, and a little salt and stir over very low heat constantly until the sugar melts. CAUTION DO NOT BOIL THE LIQUIDS !.
  3. Once the sugar has melted, remove the saucepan from the heat and pour it into a deep bowl. Then add the yeast (which will have swelled) and slowly add our flour. 
  4. Once it becomes an elastic dough that comes off our hands, we cover it and let our dough rise in a warm place.
  5. Then, as soon as our dough is doubled, we take two pans, place oil glue on the pans and then with our dough we form braids and place them on our plates and leave them again in a covered place to rise again.
  6. Once they are ready puffed, we spread them with our sugar water, we sprinkle them with almond fillet and sesame, we put them in our oven at a temperature of 170The for about 20 minutes (depending on how big our braids are).
