Boiled salad for a healthy nutritious diet. Delicious and healthy and easy.

Accompanies fish or meat or cheese.

Ingredients

  • 2 boiled potatoes
  • 2 boiled eggs
  • 4 boiled zucchini
  • 2 boiled carrots
  • Or greens of our choice boiled.
  • 2 tablespoons olive fillet
  • 2 tablespoons capers
  • Or olive oil
  • Juice from a juicy lemon
  • ½ κ σ ρίγανη
  • Coarse salt
  • Freshly chopped pepper.

Directions

  1. We boil our vegetables. Be careful, boil the potato with the skin so that it does not draw too much water.
  2. We try them with a toothpick if they are ready. In a bowl, place the greens and cut our vegetables and eggs on top.
  3. In a bowl, beat the oil with the lemon and the salt and pepper with the oregano.
  4. Pour over our vegetables.
  • Ideally we could make a plate with various kinds of boiled vegetables such as cauliflower, broccoli, beetroot, green beans, fennel, Brussels sprouts, sweet potato etc
  • If you want in the dressing, add a tablespoon of mustard, soft for extra flavor.
