Greens with goat cheese and beetles


A different salad that the combination of ingredients highlights each one individually. Simplicity and pure flavors bring a delicious result that will stay in your mind.


  • 1 kg of various wild grasses
  • 250 g goat cheese
  • 200 g beetles
  • 2 sc whole garlic
  • Olive oil
  • Lemon juice and zest
  • Salt Pepper.


  1. After we have thoroughly cleaned and washed our greens, we boil them, being careful not to leave them longer than they should and they melt. It is good to hold a little.
  2. In a frying pan, lightly sauté the garlic in a little olive oil until the olive oil smells, and then sauté the beetles lightly.
  3. Remove the pan from the heat and add the olive oil, salt and lemon with the zest until you have a balanced taste.
  4. Place our greens with the goat cheese on a plate and pour the mushroom sauce on top.
  5. When finished, add plenty of freshly chopped pepper.
