Octopus meatballs

  • 500 g octopus
  • 2-3 bay leaves
  • 2 dried onions, finely chopped
  • 3 slices of stale bread wet and well set
  • Salt Pepper
  • 4-5 grains of pepper
  • 2 tablespoons vinegar
  • 1 cup olive oil
  • Or chopped dill
  • Or chopped mint
  • Or finely chopped basil
  • 2 tablespoons flour that swells on its own
  • Flour for frying
  • Seed oil for frying


  1. We start with the octopus. Remove the eye and its tooth, and put it in a saucepan with the bay leaves, vinegar, and peppercorns.
  2. Cover the pot and simmer for 45'-1 hour (ie let the octopus boil in its juice).
  3. Once the octopus is boiled, put it in a blender with a little olive oil and mash it.
  4. We take a bowl and add the bread, the octopus, the flour, our spices and mix well. Cover with cling film and leave in the fridge for an hour. Then mix them again and shape into balls
  5. Flour them and fry them in hot oil.
  6. Sprinkle with fennel and serve.
